Does the aroma  wafting in from the nearby bakery make you want to stop in your tracks? Memories, that fondly recall your grandmother’s baked goodies?

Mermaid Bakes is a new venture that will definitely put you in the mood to take that trip down memory lane or carve a new one altogether. Located at Vettikonam, near Vazhayila, this home-based baking operation was started in October 2011 by Arielle Varghese, a food enthusiast. Food is not just a necessity to her but a dynamic passion.
 

 

 

“I’ve been cooking since I was 8 years old and since then, food has been a passion for me. My dad is an excellent cook and made a variety of dishes from all over the world. It often felt like we could just taste the world from the comfort of our home,” says Arielle with a smile. Needless to say, it was her dad who instilled in her the passion for food and cooking.

Arielle began with just muffins but has slowly expanded into cakes and tarts to indulge a few whims. Every bake-house has a signature product and it is no different here. The Red Velvet Cupcake is the highlight among the various baked items available here and the pricing is thankfully reasonable. Muffins start at Rs.10. The Red Velvet Cake is currently the most expensive of the lot, with the price being Rs.350 per kg.

Arielle completed her Bachelor’s in Hotel Management from Christ College in Bangalore, following which, she had a couple of teaching stints. True to her nature, she had some pretty unconventional teaching methods. “It may sound strange, but it was food that connected me to my students!!” she says with a giggle.

 

Mermaid Bakes was started on an impulse. “It was a pretty quick decision. I had made up my mind that food is where my heart lies. So one day I quit the teaching job, just like that and quite literally, the very next day started the bake-house,” she says. Her whole family pitches in, which makes the business a family affair.

Ask her why she chose Trivandrum as the place to start her bake-house when Cochin was a more obvious choice, pat comes the reply. “Though we are originally from Thiruvalla, our family has been based in Trivandrum for a very long time. Plus, I feel that Trivandrum is on the forward path to development. It is also pretty quiet and peaceful when compared to Cochin. The city isn’t hectic like Cochin either and one can take their time to do things which is exactly how I love it,” she says with a smile. It has been about 3 months since she started the bake-house and the business has been good, according to Arielle. She also takes extra care to meet the special demands of her customers, especially those who are calorie-conscious. ‘I take my orders 1 day in advance.  Sometimes, there are people who may have an allergy and want me to try something new. They send me their requirements a few days in advance. This gives me time to analyse and prepare what they need without compromising on the quality of the food.”

Arielle doesn’t plan a lot but her dream is to own a café where people can hang out, socialise and have a great time and also  present their talents. “Right now, I am focused on the bake-house. I am taking it one step at a time,” she says, signing off.

Your article which comments that "Kochi is the natural choice" is just reinforcing the prejudice that Kochi is some Metro city and Tvm is some village. This is just nonsense. 80% of IT exports are from Tvm. Evryone knows IT jobs are the highest paying. So who has more purchasing power?Tvm or Kochi. Also Ambrosia is the largest bakery chain in Kerala based in Tvm and founded in 1996. So Tvm is the natural choice not Kochi Its sad that a portal like Yentha, based in Tvm is reinforcing such prejudices which is being propagated by vested interests (primarily real estate lobbies and politicians) through paid news and PR agencies to jack up real estate prices in Kochi so that they can make a profit. Please dont fall for such stories. Please examine facts . Not one of Kochi's projects are real. All are big land scams like Smartcity, Cricket stadium, Intl Container terminal(which is running in severe loss).

Trivandrum is developing at a rapid pace. Yet Cochin has a lot of more food-forward options. And they are talked about much more than those in Trivandrum. The statement made does not create a prejudice against Trivandrum here yet promotes the fact that Trivandrum can be just as much of a home to these business.

Very well written article. Concise and to the point with empathy. The argument about Yentha.com promoting Kochi is ridiculous. Each city has its own pace and pattern of growth. Trivandrum is unique in many ways and I hope it is planned in such a way that the peace and quiet remains. In terms of the food, home-baked enterprises provide a touch of caring and taste that the bigger bakeries cannot afford. Even if the scale is smaller, the experience for the one who participates in making a choice between big and homoegenous and small is delicious. Keep going, Arielle!

Going by the variety of restaurants in offing Kochi should be the natural choice Fact is purchasing power is not dependent on IT jobs, Kochi thrives because it has lot of entrepreneurs which trivandrum lacks. Trivandrum is basically a city of Govt. employees which is the reason why people are not investing but that image is changing hope it will take atleast 5 years for Big brands to set foot here

My two cents - if all the big brands, and all those big fancy cars and malls come ... well they don't come alone. They bring friends along - chaos, smoke, sound pollution, accidents, shift in our societal values, materialistic, etc ... now Tvm has a pace. Tvm has a soul. If you take it away it will become another city ... don't we have many already ... compare the European cities with the American cities ... choices are in front of us ... and this article has nothing to do with prejudices ... take what you like and enjoy ... let's move forward folks ... if we fight over two cities, can we fault the politicians? I am from Tvm and I want all investment to go to Kochi ... so that my city will retain its charm ... if you want to go shopping, a time will come when Singapore will be easier to access than Kochi ... Peace !

Kudos to Mermaid bakery. I am protesting against Yentha's editorial comments not Mermaid Bakery. Do you have any proof or facts..just giving some hand waving explanation that kochi has more food options..any person on the street can do. Pls name any indigenous food chain based in Kochi having branches across Kerala.? Ketal's chicken based in Chalai,Tvm has branches across Kerala (4 locations in Kerala) and is considered the first indigenous chain restaurant in Kerala. Ambrosia Bakehouse has four outlets across Tvm city.(please tell me about any bakery chain in Kochi or other cities) So who has more entrepreneurial skills in the food business? Its amazing how some PR lobbies and media (like Manorama who has business interests in KOchi) manage to brainwash people of Kerala. Please examine facts and state your case, not on some hearsay.
